Coconut Milk Fruit Pop

The ice cream man was quite possibly one of the best things about summer when I was a kid. So what that when our filthy ice cream man used to turn around to get our popsicles out of the freezer his entire ass crack would show. It was part of the charm, I guess.
I don’t think I want to know what was in a Big Stick. And if you don’t know what those are, I’m so sorry for your life.  Although, I’m pretty sure the ingredients might have taken a couple years off of my life so you may be better off if you never had one. They were, however, delicious. Which is why I was stoked, to say the least, when this popsicle I made last week ended up kinda sorta looking just like one, only no yellow #5. Ummm, p.s., yellow #5 is linked to asthma, migraines, thyroid cancer, anxiety and clinical depression to name a few…..
I digress.

These ingredients are clean, super simple, and there are only about 5 of them.

Here’s what you’ll need:
-popsicle molds
-1 1/2 cups coconut milk ( I make my own. It’s super easy.)
-1 mango
-1 nectarine
-1/4 cup raspberries
-a sprinkle or two of stevia powder (optional)

Directions:
1) Place skinned mango pieces in blender, along with one cup coconut milk. Blend it up. Pour mixture in popsicle molds about 1/2-3/4 of the way full.
2)Rinse blender.
3) Place pitted nectarine and raspberries in blender and add 1/2 cup coconut milk. Blend it up. Try the mixture. If it’s too tart, you can add a sprinkle or two of stevia powder like I did.
4) Pour nectarine/raspberry mixture in molds until full.
5) Freeze for about 8 hours and enjoy!
